A method is proposed that allows one to control the number of photons of a travelling-wave field by using a trapped ion in a leaky cavity. An appropriate Raman interaction is used to entangle the atomic motion and the cavity field. Motional Fock states are prepared by detecting the number of photons leaking out of the cavity. Upon request the motional Fock state can be converted into a fixed number of photons, which eventually propagate outside the cavity.
